Mexican Corn & Bean Soupa

*Vegetarian, low-fat and pretty cheap!

Sauté in a little olive oil in a large pot:
1 medium finely diced onion
3 cloves minced garlic

Add to pot and heat to a slow boil:
1 -15oz can diced tomatoes
2 -15oz cans red kidney beans (drained)
1 -24oz can vegetable juice

Mix together in a small boil, add water to a paste-like consistency - then add to pot:
3 teaspoons chili powder
1 teaspoon sugar
1/2 teaspoon black pepper
1 teaspoon cumin

Add to pot, heat to a slow boil, reduce heat and simmer about 20 minutes:
1 - 1 LB bag frozen corn

Garnish with sour cream and Tortilla chips - if desired.
