  1 c. flour
1 c. white whole-wheat flour
1 ¼ c. sugar
1 T cinnamon
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
2 c. grated carrots
1 apple peeled, cored and chopped
1 c. raisins
3 eggs
½ c. apple butter
¼ c. veg. Oil
1 T vanilla
½ c. chopped walnuts
Preheat oven to 375. Lightly oil 18 muffin cups. Blend dry ingredients. Stir in carrots, apples, raisins, and nuts. Add eggs, apple butter, oil and vanilla, stirring just until moistened. Fill muffin cups ¾ full. Bake 15 – 20 min.
